Rewind to 14th February 2020 and you may remember, with fondness, your last proper night out before our lives as we knew them changed beyond recognition. Oh to pop out for a meal with your loved one to celebrate Valentine’s day – mask and sanitizer free. Even a masked night out sounds attractive right now, but it’s not to be this year so let’s use the opportunity to cook at home and turn your eating area into a dining love shack!
So, we’re indoors this year, and creating a banging 3 course romantic meal never seemed so pertinent. So that’s what we’ve done. The starter is light with a sharpness to get the party started. The pomegranate gives a lovely sweetness to the peppery watercress along with a protein punch of salt and pepper tofu and plenty of herbs.
The main course is a perfect mix of indulgence and comfort and if your relationship is well established, get your hands in there and use the bread to scoop it up (a newer relationship may require a little more decorum!) The tzatziki works so well on the dish, giving a punchy edge and alternative texture.
And now for desert. In my view, there is no better pudding than a cheesecake and this veganised classic is a perfect end to the meal.
So staying in is definitely the new going out this Valentine’s day so get cooking and try out our vegan 3 course meal.
