When I made the Tofu Nuggets recipe by Tofuture (amazing btw), I wondered if it could be altered to create Tofu Burgers and it can! I wanted a beefy type burger on a bun with all the trimmings; gherkins, avocado, tomato, jalapeños, lettuce and sauce. Burgers are one of my favourite things and I’ve tried many vegan supermarket options, some of which are great (Linda McCartney’s ¼ Pounders), some are OK (Asda’s own brand burgers) but most are what omnis may call “cardboardy” (fair comment as its true though). My other burger recipe offers a different texture to these Tofu Burgers but both hit the burger spot!
INGREDIENTS:
- 1 block firm smoked tofu – use the Tofuture press for 20 minutes to get rid of excess water
- 80g chickpea flour
- 3 tbsp nutritional yeast
- 1 tbsp hot pepper sauce
- juice of ½ lemon
- 2 tbsp rapeseed oil
- 1 tbsp marmite
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp sage
- 1 tsp parsley
- 1 red onion
- Add all the ingredients to a processor and whizz until smooth.
- Take a frying pan and fill with a little rapeseed oil and wait for it to get hot.
- Dollop a spoonful of the mixture in (it will be quite wet at this stage)
- Wait for 10 seconds and then flatten with the back of a spoon to make a burger shape.
- Fry for 1 minute, flip over and fry the other side for 1 minute.
- Transfer to a baking sheet and cook in the oven for 40 minutes @ 200.
- Serve on a bun with your favourite burger toppings
