A Pizza without cheese is like a cup of tea without a biscuit or so I thought. Pizza express do an amazing cheese-free pizza and I drew inspiration from this. Really the ingredients are whatever you want them to be once you add the sauce to the base. Shop bought bases are usually vegan or make your own. I also like to use ciabatta for the base – makes a really quick healthy meal and my kids love choosing their own ingredients. Helps them to happily eat their veggies! The sauce freezes well too so separate into portions.
Sauce
- 1 tin of plum tomatoes
- 1 red onion
- 1 stick of celery
- 1 tsp smoked paprika
- 1 tsp dried oregano
- Salt and pepper
- 3 tbsp tomato puree
Toppings
- Artichoke
- Pine Nuts
- Asparagus
- Red Pepper
- Olives
- Spinach
- Roasted courgette
- Roasted cauliflower
- Jalapenos
- Rocket
To make the sauce, place all the ingredients in a pan and simmer for 30 minutes until the celery is soft. Drain away the excess liquid using a sieve so you are left with the chuncky tomatoes and veg and blend until smooth. Add more salt and pepper to taste and stir in the tomato puree. Take your Pizza base and spread generously. Add your toppings and grill for 7-8 minutes and done!
