I talk a lot about what I feed to my kids and I love serving them “grown up” food that they get a sense of fun out of. The pleasure I get from seeing them enjoy food while knowing they are getting their 5 a day twice over cannot be beaten. I often add in extra veg too – whatever is in the fridge usually gets thrown in. As long as it fries well, it’s a option.
INGREDIENTS
100g cooked rice or noodles
dash of sesame oil
1 carrot
½ broccoli stalk
1 stick celery
½ leek
4 slices basil tofu cut into cubes
5 tbsp soy sauce
½ tin water chestnuts
½ head broccoli
½ pack beansprouts
handful of cashew nuts
romaine lettuce leaves
- Chop the carrot, broccoli stalk and celery into small pieces
- Add to a wok or frying pan with the sesame oil and fry for 5 minutes
- Add the tofu and leek and cook for a further 5 minutes stirring occasionally
- Add the soy sauce, water chestnuts, broccoli and nuts for a further 2 minutes
- Finally add the beansprouts and rice and fry for a further minute
- Serve immediately – a dollop of rice/veg mixture with a side of lettuce leaves
- Stuff and roll the mixture into the lettuce leaves with added soy sauce to taste
What makes this dish fun for kids is the mess! I suggest filling the leaves up a spoonful at a time to minimise the damage!
