I love these yummy cheezy crispy morsels. I eat them as a side dish, as part of a fry up, even on a butty with a piece of facon and a load of brown sauce! They do go really crispy and I like shop bought breadcrumbs for this recipe as they stick better and result in a crispier texture.
- 660g potatoes
- 50 g Nutritional Yeast
- 15 ml Olive Oil
- ½ tsp Himalayan Pink Salt
- 1 tbsp Lemon Juice
- ¼ tsp Onion Powder
- ¼ tsp Garlic Powder
- ¼ tsp Cayenne Pepper
- 4 spring onions
- Handful of parsley
Chop and cook the potatoes, drain and mash with the olive oil. Finely chop the spring onions and parsley and add to the potato mix along with the rest of the ingredients and bind together. Using your hands, form the potato mixture into croquette shapes and roll in the breadcrumbs. Spray with oil and bake for 30 minutes at 200o c.
