If you’ve seen some of my recipes you may have cottoned on that I love the mighty spud. I don’t go more than 2 days without some form of potato on my plate. I know that a lot of recipes use sweet potato now as a healthy alternative bla bla but it just doesn’t satisfy that carb need for me. I am also a huge cauliflower fan and something in my mind combined my two loves, added some cheeze and ta-dar, the Cauliflower cheeze stuffed jackets were born. These are simply amazing. I know I shouldn’t say that about my own recipes but they are, its just a fact! You must try them! Check out my cottage pie stuffed spuds too!
INGREDIENTS:
- 4 large potatoes
- 3 tbsp vegan butter
- 2 tbsp corn flour
- 100 ml plant based milk (unsweetened)
- 6 tbsp nutritional yeast
- 1 tsp turmeric
- 2 tsp dried chives
- 2 tsp fresh parsley
- 200g cauliflower
METHOD:
- bake the potatoes in the oven for about 1 hour until they are fully cooked
- meanwhile melt the butter in a pan and stir in the flour stirring continuously
- slowly add the milk to make a white sauce
- remove from the heat and add the nutritional yeast, turmeric, chives and parsley
- cut the cauliflower into small pieces and blanch for 2 minutes
- once the potatoes are ready, wait for them to cool and then slice in half and scoop out the potato into a bowl
- add the sauce and cooked cauliflower to the potato and stir to combine
- place the potato skins on a tray and reload the mixture into the skins
- re-bake for 15-20 minutes until golden on the top
