I have never had a sweet tooth so most of my recipes are savoury based. I do appreciate I am in the minority so I have made a resolution to make more effort. These pancakes seemed a good place to start as the natural sweetness of the blueberries and the addition of only natural sweeteners means they are super healthy. Not a sole will know they contain no sugar…sssshhhhhhh.
INGREDIENTS
125g plain flour
1 tsp baking powder
50g desiccated coconut
2 tbsp agave nectar
200ml dairy free milk
100g fresh blueberries
rapeseed oil
½ lemon
- Mix the flour, baking powder, coconut, agave and milk together in a bowl.
- Meanwhile add the blueberries to a pan with a dash of water and simmer gently until they break down (keep some aside for decoration)
- Once cooled, add the blueberries to the pancake mix and fry in small batches
- Serve with a squeeze of lemon, a sprinkle of coconut and extra agave
